Tomato rasam, also known as the "sniffle-kicking" soup, is a tomato-based soup from the south of India. There's enough garlic in a bowl of it to kill a cold (and several vampires); the pepper, asafetida, cumin, turmeric, and tomato will help clear up any inflammation in the sinuses. Leftover soup will keep in the freezer for up to a month, so don't hesitate to make extras for those days you feel a cold coming on.

Cowboy caviar is seriously perfect potluck party food — especially in the South, where tailgating season begins before the air turns crisp. Where once tailgating literally meant lowering the tailgate of a friend's truck, opening a bag of chips and a can of beer, we now have tents, tables, and decor. Needless to say, the snacks have improved as well. Cowboy caviar is best made ahead; it's filling but not heavy, and can be served at room temperature without any sign of congealed cheese or questionably warm mayo.

In the hierarchy of appetizers you will find bruschetta, with it's juicy chopped tomatoes, sweet basil, and pop of tangy balsamic, firmly planted at the top of my list — especially now when near-perfect summer tomatoes are still hanging around. Bruschetta is far too good to be reserved for appetizers alone, which is why I'm adding it to my meal plan to give an otherwise boring chicken dinner a big upgrade. It's a meal that's easy enough to tackle on those nights you don't really feel like cooking.
