Recipe: Tomato Rasam — Quick and Easy Weeknight Soups

Tomato rasam, also known as the "sniffle-kicking" soup, is a tomato-based soup from the south of India. There's enough garlic in a bowl of it to kill a cold (and several vampires); the pepper, asafetida, cumin, turmeric, and tomato will help clear up any inflammation in the sinuses. Leftover soup will keep in the freezer for up to a month, so don't hesitate to make extras for those days you feel a cold coming on.

Recipe: Drunken Chicken and Mushrooms — Wine and Dine

Here's my proposition to make boneless, skinless chicken breasts a whole lot more interesting: Get them drunk. Yes, the protein can often be likened to that colleague who is a touch boring and has a personality that's a little too dry, but get her a bit tipsy at the work happy hour and suddenly she's way more fun to be around. These chicken breasts are swimming in a fragrant shallot and tarragon wine sauce and paired with earthy mushrooms for a winning dinner any night of the week.

This recipe checks all of those boxes and is just as delicious as the "real thing."

Wait — France? Why? I had just returned from a trip with my husband to the south of France (ooh la la — okay, it was for his job!) and I could still taste the olives, artichokes, olive oil, and other Mediterranean ingredients that were a part of so many sunny meals. When I thought about tuna, Nicoise salad was top of mind, and so naturally a tuna noodle casserole packed with briny pops of capers, artichokes, and olives sounded amazing.

Recipe: Curried Veggie Galette — Quick and Easy Vegetarian Dinners

We should all be eating more pie for dinner. Why? Because it's hard to deny the pleasure of biting into a flaky, buttery pie crust after a long day. This freeform pie — or galette, if you want to call it by its proper name — is oh-so buttery. It's also packed with warm, curry roasted vegetables, so all that pie crust feels a bit more wholesome. A dollop of tangy yogurt on each slice provides even more balance. Serve with a simple green salad and it's a meatless meal you'll definitely want to slip into your dinner rotation.
