Recipe: One-Pot Smoked Almond and Herb Couscous — Quick and Easy Vegetarian Dinners

This side dish is so smoky and fragrant, you may find yourself pushing aside the main course so that you can focus your attention on it. Smoked paprika not only lends its intense flavor to the couscous, but it also adds color, creating the most beautiful golden hue. Toasted sliced almonds add textural crunch to the dish (something that is all too often missing in plain ol' couscous), and a slew of chopped fresh parsley brings its pop of green freshness to the equation. Enjoy this as a bed for roast chicken, grilled steak, or even just a pile of juicy roasted vegetables for a simple, satisfying meal.

Recipe: Sweet Potato Fajitas — Quick and Easy Vegetarian Dinners

Fajitas have the fun choose-your-own-adventure nature of tacos, with the added appeal of cooking things on one sizzling-hot platter. Too many vegetarian fajitas just skip the meat and cook onions and peppers together, but these fajitas do more, adding roasted sweet potato slices dusted in cumin and smoked paprika to the colorful mix. Stuff them into warm tortillas and drizzle with a tangy yogurt and lime crema and call it dinner. And because we're in the business of making things smart and delicious, one sheet pan does all the hard work, roasting the sweet potatoes, onions, and bell peppers to complete fajita perfection.

The Best Way to Get Garlic Smells Off Your Fingers — Powered by Lemon

My kids love to help me cook, which is equal parts rewarding and frustrating. It all starts with good intentions — lessons about healthy food and passed-down recipes — and quickly devolves into an egg-cracking, kale-throwing, glorious mess. Toddlers are super tactile; they want to be elbows-deep, feeling and tasting everything they can get their hands on. So naturally cleanup is a big part of the ritual. Huge.

Recipe: Flaky Garlic Bread Pinwheels — Quick and Easy Appetizers

I am warning you now that you may inhale these innocent-looking roll-ups before your friends even ring the doorbell. I had to pull myself away from the baking sheet and leave the kitchen entirely to escape the buttery, garlicky aroma. These roll-ups wouldn't make it to their serving platter if I lingered too long.

This is the kind of homemade appetizer that is going to win you accolades. Make them once and friends will begin to ask you for those "flaky, garlicky things" each time they drop by; it's already happening to me! That's not necessarily a bad thing because they're something you can keep stocked in the freezer to bake off at a moment's notice. They'll bake in just the amount of time it takes to pop open a bottle of wine and pour everyone a glass, ensuring your happy hour is effortless.

Recipe: Parmesan Chicken and Kale Sauté — Low Carb Recipes

I believe Parmesan cheese can make nearly anything better. In this case, I am referring to boneless, skinless chicken breasts and kale — two things that can be hard to love sometimes, but trust me when I say you'll love them here. It's a chicken dinner that's comforting and hearty, thanks to the sharp cheese and leafy kale, yet not a touch heavy, due to acidity of the white wine and a splash of lemon juice that finishes it off.

This one-skillet dinner feels both wholesome and special, which makes this a meal that fits the bill on any ol' weeknight but also when you feel like pulling out the cloth napkins and pouring yourself a glass of that wine.
